La receta de hoy es una de esas perfecta para comer bien, sano y olvidarte de que estás haciendo la comida. No es rápìda, como todo lo bueno, pero no hay que estar encima, con lo que puedes dedicarte a otra cosa. De hecho, yo hoy he estado amasando, me ha dado tiempo a sacar al perro, recoger a mis niñas y volver a casa con la comida en su punto justo.
Se trata de un pisto, pero que se hace al horno, con lo que el aporte calórico se reduce al mínimo y además, se le añade carne picada de ternera, con lo que conseguimos la cantidad de proteína suficiente como para hacer un plato único.
A mis niñas les gusta mucho y teniendo en cuenta tal circunstancia, (niños comiendo verdura!!!), he tuneado un poco la receta y así aprovecho para meterle zanahorias y muchas veces hasta brócoli.. Lo que hay que hacer!!!
INGREDIENTES:
- 1 berenjena grande.
- 1 calabacín grande.
- 1 pimiento rojo pequeño (a mí me gusta poco)
- 1 cebolla mediana
- 1 patata grande
- 3 tomates maduros
- 3 cucharadas de aceite de oliva
- Sal y nuestro baharat o en su defecto pimienta.
- Un poco de orégano y comino.
- 350 gr. de carne de ternera picada.
PREPARACIÓN.
En una fuente de horno vamos poniendo la verdura pelada y troceada en cubos (yo los hago pequeños por mis peques y así comen con cuchara).
Lo sazonamos a nuestro gusto con sal, baharat o pimienta y un pellizco de canela, un pellizco de comino y espolvoreamos con orégano.
A continuación trituramos los tomates, los vertemos sobre la mezcla de verduras, añadimos el aceite de oliva y removemos bien para que se integre.
NOTA: La receta original lleva concentrado de tomate, pero encuentro que lleva demasiada sal y para darle un poco más de color al caldo a veces recurro a una cucharada de tomate frito...No es necesario, en realidad.
Precalentamos el horno a 180 ºC.
Ahora disponemos la carne picada previamente sazonada, como si fuera una hamburguesa gigante. Con este paso lo que conseguimos es que la carne funcione como una tapa y así la verdura se cueza más rápido.
Metemos la bandeja al horno y ahí se queda hasta que veamos que la carne está cocinada.
En ese momento, sacamos la bandeja del horno, troceamos nuestra "hamburguesa" gigante, lo revolvemos todos y ahora sí, subimos la temperatura del horno a 200ºC y lo dejamos ahí hasta que veamos que la mayoría del caldo se ha consumido y la parte de arriba se ve tostadita y crujiente.
Deciros un tiempo, siempre sería aproximado puesto que cada horno funciona de una manera. En total puede tardar alrededor de 90 minutos, pero ya digo, es orientativo.

ENGLISH VERSION
SYRIAN RATATOUILLE WITH GROUND MEAT
Today's recipe is one of those perfect, healthy, complete and easy to make meals, that you can even forget that you're cooking. It´s not fast cooked, like all good things it needs it´s time, but you don´t have to stand still in the kitchen until is done, so you can do whatever you want. In fact, I've been kneading bread today, I had time to walk the dog, pick up my girls from school and when I was back at home, our lunch was ready to serve....
This is a ratatouille, but it is baked, thus caloric intake is minimized and besides, you add ground beef, so we got just enough protein to make a single dish.
My girls like it a lot and given that fact, (children eating vegetables !!!), I tuned a little recipe and so take the opportunity to add carrots and sometimes even broccoli .. What we do to make children eat veggies !!!
INGREDIENTS:
- 1 large eggplant.
- 1 large zucchini.
- 1 small red pepper
- 1 medium onion
- 1 large potato
- 3 ripe tomatoes
- 3 tablespoons olive oil
- Salt and our baharat or in default pepper and cinnamon.
- A little oregano and cumin.
- 350 gr. of ground beef.
PREPARATION.
In a baking dish we put the peeled and chopped vegetables into cubes (I make them small for my kids and so eaten with a spoon).
We season it to our taste with salt and baharat, or a pinch of black pepper, a pinch of cinnamon, a pinch of cumin and sprinkle with oregano.
Then grind tomatoes, pour over vegetable mixture, add the olive oil and stir well to integrate.
NOTE: The original recipe calls for tomato concentrate, but I find it 's too salty and give a little more color to the broth with a tablespoon of tomato sauce ... There's no need, really.
Preheat oven to 180 ° C.
Now we arrange the meat on top of the vegetables, previously seasoned , like a giant hamburger. With this step we make the meat function as a cover and so the vegetables are cooked faster.
We put the dish in the oven and keep it there until meat is cooked.
At that time, we take out of the oven the baking dish, chop our giant "hamburger" stir it all and now, rise the oven temperature to 200º C and leave it there until we see that most of the broth is consumed and the part of above is golden and crisp.
About baking time, it´s always approximate since each furnace operates in a way. In total it can take about 90 minutes, but I say it is indicative.
Now I think the picture speaks for itself. It is terrific !!
